As part of KCC Ramjhol 4.0 – Desert Meets Delta, Kolkata Centre for Creativity presents PADHARO SAA – Flavours of Rajasthan, a three-day immersive dining experience celebrating the extraordinary diversity of Rajasthan's culinary heritage.
Curated by Chef Ambrish, the experience unfolds over three days, with each menu exploring a distinct regional culinary tradition shaped by Rajasthan's history, geography, and communities.
Day 1 | 30 July – Sheherwali Cuisine (Lunch)
Discover the refined vegetarian legacy of the Sheherwali community, a 350-year-old culinary tradition of the Oswal Jains. Prepared without onion, garlic, or root vegetables, the cuisine transforms simple ingredients such as banana flower, raw banana, lentils, dairy, and aromatic spices into elegant, flavourful dishes that reflect both restraint and royal sophistication.
Day 2 | 31 July – Bikaneri Cuisine (Lunch & Dinner)
Journey into the heart of the Thar Desert with the bold and resilient flavours of Bikaner. Featuring sun-dried ingredients, indigenous desert produce, gram flour delicacies, fiery spice blends, savouries, and rich ghee-based sweets, the menu showcases a cuisine shaped by the ingenuity of desert life.
Day 3 | 1 August – Jodhpuri Cuisine (Lunch & Dinner)
Conclude the experience with the vibrant vegetarian traditions of Jodhpur, where millet-based staples, rustic breads, robust vegetable preparations, spicy snacks, and indulgent milk-based desserts come together in a cuisine that is both hearty and deeply rooted in Marwar's culinary heritage.
More than a food festival, PADHARO SAA is an exploration of Rajasthan through its kitchens, recipes, and stories. Accompanied by narratives that reveal the origins of each dish and the communities behind them, the experience celebrates food as a living archive of memory, migration, and tradition.
About the Curator
Chef Ambrish is a chef and culinary curator whose work celebrates India's regional food traditions through immersive dining experiences. Passionate about preserving authentic flavours while presenting them with contemporary sensibilities, he combines fresh ingredients, traditional techniques, and storytelling to create memorable culinary journeys that honour India's rich gastronomic heritage.
